
Ahh... I'm glad you asked! I know you have a ton of sale priced, leftover cream cheese that you didn't quite finish up when making pumpkin bars or other holiday treats thus far, going bad in your fridge. I hate wasting food, so I have a couple little solutions for you...
PINK SAUCE for pasta. Blend a half of a bar of softened cream cheese into a jar or 16 oz of red sauce and heat to blend. Goes great with pine nuts on top!
SWEETENED CREAM CHEESE CREPE FILLING. Make a batch of crepes, slice up some fruit or berries and sweeten a little cream cheese with sugar and whip. Roll inside crepes and serve with sausage for a sweet and savory dinner alternative!
POLENTA FILLER. Chicken stock and corn meal on the stove heated over low heat for about 10 minutes makes a great polenta base. Add a few heaping tablespoons of cream cheese to the mix and a pinch of thyme and voila, creamy and tangy polenta!
SANDWICH SPREAD. Use it instead of mayo on your sandwich and add some cold cuts and a little cranberry sauce and dijon. Believe me, you won't be disappointed!
*It's 9:30pm right now and my husband and I just ate the leftover pasta with pink sauce and now are working on the crepes. The polenta didn't make it farther than one day in our house otherwise we may be eating that too and tomorrow I'm eating that sandwich. No more leftover cream cheese at our place!
